There are many weeknights where I just don’t feel like cooking. I either have blog posts to edit, or house things to take care of or I’m just exhausted from a day at work. For nights like these, I keep veggie burgers in the freezer. Our favorite are the Morning Star Garden Veggie patties. They are packed full of flavor and are just so delicious!
On this particular day I was in the mood for a sandwich so I pan fried the veggie burgers until crisp and then cut up some tomato and cucumber and cooked up some turkey bacon in the microwave. I added some mustard to my low carb bread and topped it all with a fried egg. This sandwich was devoured in just under 5 minutes.
It was so quick and easy and satisfied my taste buds 🙂
There’s really no recipe needed for this because you can make it however you want with whatever ingredients you’d like!
