I usually have sugar free jello for dessert. Like, every night. But sometimes, I want a little something else for dessert, especially when I’ve eaten too few carbohydrates according to what my doctor would like.
That’s when I go to my tried and true pre-packaged desserts that I don’t even have to think about. I know the carbs, I know how my body reacts to them and I know how they will fit into my meal plans.
I’ve compiled a list of my favorites and I’m delighted to share them with you!
Enjoy Life Chocolate Chip Cookies – These are gluten free (not a requirement for me), vegan and super yummy. They have soft baked and crispy (I prefer the crispy). A serving is two cookies, but I only eat one.
Breyers Carb Smart Ice Cream – There are a few different flavors to choose from, but I prefer to stick to the basic chocolate and vanilla. I love to eat this topped with just a teaspoon of cool whip and a teaspoon of pecans. I only eat one scoop which is a quarter cup and equals half a serving.
Jell-O Sugar Free Pudding – I like buying the pre-packaged ones rather than the kind you make at home. It’s easier to measure the carbs and it’s actually lower in carbs than the kind you make at home. Again, I usually top this with one teaspoon of cool whip.
Blueberries/Strawberries and Cream – One ounce of blueberries is surprisingly a lot of blueberries. I will eat one ounce of blueberries and two ounces of strawberries, again with one teaspoon of cool whip.
Cottage Cheese with Berries – I was surprised when I first tried cottage cheese. I didn’t expect it to be so delicious and satisfying as a dessert, but it is – especially with berries.
As you can see, I eat a lot of Cool Whip. There is always a tub in the fridge and one in the freezer for back-up. Cool whip is so delicious, low in carbs and calories and a little goes a long way.
