I saw that Laura Vitale made a restaurant style salsa on her channel and I just had to try it! I did make some changes to her recipe due to not having all the same ingredients on hand, but it turned out delicious!
Here’s Laura’s recipe with my notes in red.
2 15oz cans of Diced Tomatoes with Onions and Peppers – I used 8 oz grape tomatoes
1 cup (loosely packed) of Cilantro
1 Small Yellow Onion, roughly chopped – I used 1/2 small red onion
1 Jalapeno, seeded – 1/2 green pepper
Juice of 1 Lime
3 Small Cloves of Garlic
1 tsp of Sugar – omitted this completely
1/2 tsp of Cumin
1/2 tsp or Oregano – omitted this
Lots of Salt
Red Pepper flakes to taste
Rough chop your ingredients (make sure to remove seeds from peppers), add to your food processor and pule a few times to get the desired consistency. Chill in the fridge for 2-3 hours or up to over night. Service with chips or veggies.
