Peanut Butter Oat Breakfast Bars (Gluten Free)

A couple of months ago, I picked up a huge tub of peanut butter at work {and when I mean huge, I’m talking five pounds people}. Then, I picked up a pretty big tub of oats. What to do? What to do? Of course, peanut butter oat bars! I was extra excited to make these gluten free.

These are actually very easy to make and come together in a flash. I told the hubby that I thought that they tasted like peanut butter brownies. Yes, they’re delish!


PEANUT BUTTER

I added both white and semi sweet chocolate chips in this recipe, but if you don’t want those, feel free to replace with dried fruit, or nuts! Or, you can always just add one chocolate or the other.

Peanut Butter Oat Breakfast Bars (Gluten Free)

Ingredients

  • 1 C Peanut Butter
  • 2 eggs
  • 1/3 C granulated Stevia
  • 1/3 C regular white sugar
  • 2/3 C rolled or quick oats
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 2/3 C chocolate chips or other add in of your choice

Instructions

  1. Pre-heat your oven to 350 degrees and line an 8x8 inch pan with parchment paper.
  2. Mix your peanut butter, vanilla, eggs and sugar in a bowl with a hand mixer or in a stand mixer until combined.
  3. In a small bowl, combine your oats, baking soda and chocolate chips and mix to incorporate everything together.
  4. Add in your dry ingredients to your wet and mix until combined.
  5. Bake for 28-32 minutes, until a toothpick inserted in the center comes out with moist crumbs.
  6. Let cool for 30 minutes before cutting.
