Low Carb Chocolate Fudge Cookies with White Chocolate Chips


If I’ve said it once, I’ve said it a thousand times. I love cookies. I love cookies in all shapes and forms and of all flavors. It’s been difficult to not have cookies for over a year, and to be honest there are days when I cheat and split a cookie because I just need a little taste of sugar.

These cookies though, are fantastically delicious and I eat them with zero guilt. My husband said they remind him of lava cake when eaten warm, and of fudge when eaten cold. I agree wholeheartedly though I like them better cold than warm as I do with most cookies.

I’ve made these twice in the span of a week and though they were good the first time, I adjusted the recipe and they were even better the second time.

Look at the center of the cookie! So fudgy and delicious!



Low Carb Chocolate Fudge Cookies with White Chocolate Chips

  • 1 stick of unsalted butter, softened
  • 2 eggs
  • ½ C unsweetened applesauce {or one small container}
  • 2 teaspoons of vanilla
  • 10 drops of liquid Stevia
  • 1 C granulated Stevia
  • 1 pinch of salt
  • 1.5 C 100% Pure Cocoa Powder
  • 1 C white chocolate chips
  1. Pre-heat your oven to 350 degrees F. Prep your cookie sheet by either putting down a silpat or spraying with non-stick cooking spray.
  2. In a large bowl mix together your wet ingredients. Once incorporated, slowly mix in your cocoa powder and salt.
  3. Once your batter is mixed well, add in your white chocolate chips and incorporate them thoroughly.
  4. Using a handy-dandy small ice cream scoop, scoop out even sized cookies on to your baking sheet leaving about a half inch between each. They will not spread very much so you don't need too much space between each.
  5. Bake for 10-13 minutes. I baked mine for 10 minutes and then turned off the oven and left them for 3 more minutes.
