Can it be true? Brownies that are healthy AND taste good? I didn’t believe it either, but these really are relish. Do they taste like a traditional brownie? No. Do they taste good? HECK YES!
What makes them taste even better is the fact that it is made completely with healthy ingredients so there is no guilt for eating them. Bonus: they are gluten free and low carb too!
I modified this recipe from Clean and Delicious – making it more low carb and with ingredients that I normally would have on hand. I’ve posted her recipe below with my modifications in red.
- 1 large avocado
- 1/2 cup mashed banana I used 1/2 C unsweetened applesauce
- 1/2 cup maple syrup I used 1/2 C baking stevia
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup coconut flour
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp sea salt
- 1 tsp baking soda
- 1/3 cup chocolate chips I used about 1/4 C white chocolate chips and 1/4 C chopped walnuts
Put your avocado, applesauce, vanilla in a food processor and whiz until smooth.
Add smooth puree into a large bowl and whisk in your eggs, vanilla and stevia.
Fold in your coconut flour, cocoa powder and baking soda.
Transfer to a greased 8×8 pan and even out. Sprinkle white chocolate and walnuts over top.
Bake at 350 degrees for 25 minutes.
Makes 16 square servings. Eat warm or straight out of the fridge. I actually think that these get better the longer they sit in the fridge.
