As the month of tomatoes comes to a close, I leave you with one of my favorite go-to sandwiches – the grilled cheese and tomato. This is so easy for a quick week night dinner. This is also a great vegetarian option as you don’t even miss the meat.
You can use whatever cheese you prefer and whatever veggies you have on hand. I added avocados to ours but if you have another veggie on hand just use that!
