I went to visit my friend in Tampa in August, and her husband, who is a dietitian made me some quinoa while I was there. I enjoyed the one he made and asked him about other ways that he usually serves it.
He mentioned that sometimes he makes it as a “salad” and adds in tomato, cucumber and cilantro to his quinoa. I thought about it and decided to take it a step further and do it backwards. Instead of making a quinoa with vegetables, I made vegetables with quinoa.
I used some green peppers, avocado, tomato and cucumber and added some quinoa to it. I used some Italian dressing to jazz it up, but if that’s not your thing, you can definitely use some olive oil and vinegar or just some salt and pepper.
I thought it turned out great and makes for a great side salad or an easy lunch.
