On this weeks’ menu, we had a French Onion Zoodle Casserole. I was super excited about this, but also a little skeptical because I bought frozen zoodles and there was no meat in the original recipe.
Luckily, I had some ground turkey in the freezer that I had purchased extra of a previous week. I sautéed that up and added the frozen zoodles to it in the pan to thaw them a little. Everything then went in the casserole dish and let me tell you. THIS DID NOT DISAPPOINT. Even my picky husband went back for seconds.
Here’s the Recipe:
🍴2 1/2 cups zucchini noodles**
🍴1 small yellow onion, sliced thinly
🍴1 teaspoon granulated sugar
🍴1 teaspoon fresh thyme, chopped
🍴2 tablespoons unsalted butter
🍴1/4 cup beef broth
🍴2 teaspoons Worcestershire sauce
🍴1 cup fontina cheese, grated
🍴1 lb ground turkey/beef/chicken
🍴salt and pepper to taste
**I used green giant frozen zoodles and it was delicious! The only ingredient is zucchini and it was a such a time saver. One bag was enough for us, but two might have worked better.
