Pumpkin Oatmeal Bake

  • 1 C pumpkin puree {about half a can}
  • ¾ C unsweetened almond milk
  • 2 eggs, room temperature
  • ¼ C unsalted butter, melted {half a stick}
  • 2 tablespoons granulated stevia
  • 1 tablespoon sugar free maple syrup
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon {or if you prefer, you can use pumpkin pie spice}
  • 2 C old fashioned oats {use a brand like Bob's Red Mill for a gluten free option}
  1. Pre-heat your oven to 350 degrees and prepare your 8x8 baking pan with some non-stick spray.
  2. In a large bowl mix all of your ingredients minus the oats.
  3. Once your wet ingredients are all incorporated, add in the oats.
  4. Transfer to your prepared baking dish and bake for 20-25 minutes.
  5. Serve warm with a drizzle of sugar free maple syrup.
