Growing up, we ate pizza every Thursday night. That was my mom’s busiest work night and she just didn’t have time to cook. I didn’t mind – pizza and Friends seemed like a treat to me!
Fast forward to today and I still crave pizza on Thursday nights. Not being able to eat traditional pizza, I’m stuck with either eating an Atkins one or making one myself. On this particular day, I didn’t have any Atkins pizzas in the freezer and didn’t feel like going out to buy one. I did, however, have some thin sliced wheat rounds. Two slices equal to fifteen grams of carbohydrates. I’m allowed 30 -45. This pizza was on like Donkey Kong.
I grabbed my rounds, made some quick pizza sauce using tomato paste and some spices, topped it with some cheese, mushrooms and olives and then baked it in my toaster oven for 10 minutes.
This turned out so much better than I could have imagined and it totally satisfied my pizza craving. I’m definitely keeping this one in the rotation.
