Cinnamon Breakfast Donuts

I found the recipe for these donuts on Pinterest and I was intrigued from the get-go.

I had all the ingredients on hand so I decided to give it a whirl. I was pleased with how the dough came together and how easy it was to make. The flavor was really good too!


There was one thing that I did not like about these. Once they’re baked and cooled, they are a little dry and no super sweet as to be eaten by themselves as dessert. They are, however, great as breakfast donuts. They dip wonderfully into coffee and are great little treat in the morning.

So while these were originally supposed to be dessert, I have deemed them breakfast because they just make more sense that way.

These cinnamon breakfast donuts are great with coffee and make your mornings that much more special.
Ingredients
  • ¼ cup coconut flour
  • 2 tablespoons almond flour
  • ¼ teaspoon baking soda
  • 3 eggs, whole
  • 40 drops liquid Stevia or you can do ⅓ cup granulated
  • 2 tablespoons vegetable oil {can use coconut oil too}
  • 2 tablespoons almond milk
  • ¼ teaspoon vanilla
  • 1 teaspoon cinnamon
  • For Ganache {Optional}
  • 6 oz semi-sweet chocolate chips
  • ⅓ C heavy cream
  • 1 tablespoon butter
Instructions
  1. Pre-heat your oven to 350 degrees. Grease your donut pan well.
  2. In a mixing bowl combine all of your wet ingredients. Mix well. Add in your dry ingredients and mix until a dough forms.
  3. Using a bastry bag fitted with a large tip, pipe your dough into your doughnut pan. Spread your dough out so that it fills the crevace.
  4. Bake for 10-13 minutes, depending on your oven. They're done when they're golden brown and bounce back when touched.
  5. Transfer to a cooling rack and get started on your ganache If you choose to add it.
  6. In a microwave safe cup or bowl heat your cream and butter for 45 seconds to 1 minute. In the meantime, get your chocolate chips ready in a bowl.
  7. When your cream is done pour it over your chocolate chips and let it sit like that for 3-5 minutes. Once the time has passed, whisk the chocolate and cream together until it makes a smooth ganache. You can now dip your donuts in the ganache and refrigerate for 1 hour or longer.
