When the temperatures start to drop, my husband and I start to crave more soups and stews. I personally love making soups and stews because they’re easy, make the house smell great and leave tons of leftovers!
You’ve seen my classic chili recipe and this is the exact same thing, except I subbed in 1 lb of chicken breast instead of ground beef.
Just boil your chicken breast (or if you have the time, you can roast it and if you don’t have time at all you can cook it in the crockpot) until cooked through and then shred with two forks. Season your chicken with salt and pepper and then add to your chili. Allow to cook for another 15-30 minutes so that it soaks up some flavor and then you’re ready to chow down!
