Sometimes, I just crave a good stir fry or fried rice. I had some leftover garlic and sesame seed asparagus, and some barely and veggies so I decided to give this fried “rice” a try. I used only a 1/4 cup of barley for my whole portion and it was plenty. This dish certainly satisfied my take-out craving and I can’t wait to make it again!
I hope you enjoy it as much as I did.
- 1/4 C barley
- 1/4 C peas
- 1 egg, scrambled
- 3 oz sesame asparagus
- 1/2 bell pepper
- 2-3 oz chicken breast (or use tofu to make this a vegetarian dish)
- 1-2 tbsp soy sauce
- salt and pepper
- Cook your scrambled egg in a large pan, as you normally would and set aside.
- In the same large skillet (or wok if you have one), heat some flavorless oil (vegetable or peanut oil work great - I didn't have any so I used coconut oil) on high heat. Cook your chicken all the way through (I used pre-cooked chicken, so I just warmed it up). Heat up your peppers,asparagus,and barley.
- Once everything is cooked, add in your peas and scrambled eggs. Add in your soy sauce and salt and pepper. Watch the salt though because the soy sauce is already salty!
- Serve and enjoy!
