For me, inspiration comes from different places. Sometimes there is the perfect storm of inspiration. Other times I’m inspired by one said thing. This was one of those perfect storm inspirations. I took a little from Laura Vitale, a little from myself and created this.
Basically this sandwich is a grilled cheese with avocado chicken salad. I couldn’t fit all of that in the name, but that’s exactly what it is and it was beyond delicious.
There is no mayo in this recipe, the creaminess is all from avocado and the chicken is left over from a different recipe.
I highly suggest this one as it’s simple to make, nutritious and sooooo good.
- 1 flat out fold it
- 1 oz mozzarella cheese
- 3 oz chicken breast
- 1/2 small avocado, mashed
- salt and pepper
- 2 oz cucumber
- butter or margarine
- In a bowl, tear up your pre-cooked chicken and mix with your mashed avocado. Season with salt and pepper to taste.
- Assemble your sandwich and spread just a tiny bit of butter or margarine on each outside part of your bread. Place in a pre-heated skillet over medium heat.
- Cook until browned to your preference on each side.
- Serve and enjoy!
